Microgreens are flavor-packed vegetables and herbs harvested right after their first leaves sprout, served up to the general public and providing a kick to an everyday meal and adding a variety of vitamins, minerals, and antioxidants to the everyday diet.
I recently attended the weekly Farmer’s Market at Downtown Summerlin Mall, which hosts a variety of farmers, bakers, and other small businesses at their Pavilion. One of these independent entrepreneurs included local microgreen supplier, 702Greens.
702Greens’ motto is “Greens Made Simple,” and simple are their greens. I was able to taste test a “sprout-shot,” and these greens pack a powerful punch. The flavor isn’t as bland as vegetables are typically led on to be, with a mix of bitter, sweet, and spicy herbs to really balance out my palate.
More interestingly, I found out that in just one ounce, microgreens compare to two pounds of fully grown vegetables. It gives me a whole other perspective on quality over quantity.
After further exploration, I learnt that the nutrition mix offers a variety of benefits, including healthy aging by fighting oxidation in the body, keeping the digestive system moving, and overall body system support that fully-grown vegetables offer. Most attractively, they are grown right here in Las Vegas.

I was able to come home with a sample package of the 702Greens’ “Nutrition Mix,” and have been trying these powerful sprouts in a variety of dishes. My favorite at the moment is topping a rich, creamy ramen broth and bouncy noodles with the superfood, adding a pop of color with a side of immune support, energy, and antioxidants.
